The Dominikanerberg is the monopoly site of our family winery and the highest vineyard in the Ruwer Valley, with barren, blue slate soils. The Dominikanerberg is a 6-hectare site completely surrounded by forest and meadows: perfect conditions for biodynamic cultivation. Our Shropshire sheep live in this vineyard for six months of the year.
"NB" stands for Nell-Breuning and adorns the top quality of our winery. The grapes for this wine were carefully selected by hand. Gentle whole-bunch pressing. Fermentation in new wooden barrels with natural yeasts. Two years of barrel aging on the lees. No filtration. The wine is dense and expressive. Herbal aromas of lemon balm, chamomile, and dried wild herbs meet fine, ripe fruit. The finish is yeasty and creamy, yet taut with minerality. All this at just 10.5% alcohol by volume.
This wine pairs well with aromatic, deep dishes such as braised veal cheeks with celeriac purée or guinea fowl in herb cream. Vegetarian dishes such as roasted pointed cabbage with hazelnut butter or a mushroom risotto with fresh garden herbs also harmonize perfectly. Alternatively, simply enjoy it with a mild, mature cheese such as Comté or mountain cheese.
