Sparkling Wine

Riesling sparkling wine from the Dominikanerberg

As the oldest sparkling wine producer in the Ruwer Valley, we recognized the Ruwer's potential as a cool climate region early on. All of our Riesling sparkling wines come from our monopoly vineyard, the Dominikanerberg. The Dominikanerberg reaches an elevation of 350 meters above sea level and is located in a small side valley.

Barren blue slate soils and the cool climate shape the character of our sparkling wines and allow us to harvest the grapes for the base wine relatively late. The grapes are carefully selected by hand and pressed whole. The young wines ferment with natural yeasts, partly in barrels and partly in stainless steel tanks.

The second fermentation takes place using the classic bottle fermentation method. Our Riesling sparkling wines are aged on the lees for at least 36 months.

Sekt brut nature

Dominikanerberg Prestige

In December 2024, the Frankfurter Allgemeine Zeitung wrote about our 2014 Dominikanerberg Riesling Sekt PRESTIGE brut nature: "What a color! What ripeness! What an aroma! In the glass, the light perlage bubbles in the bright amber-colored wine, sending aromas of honey, caramel, vanilla, nuts, and spiciness to the nose, which one knows from very, very ripe Riesling. Over time, these have taken over the reins from the fruit aromas. One still senses the typical Riesling from the Ruwer region, grown on slate, senses the depth and complexity of the grape, but at this moment, one only wants to participate in this decade of aromatic development. This wonderfully ripe Riesling sparkling wine from C. von Nell-Breuning will be fondly remembered."
