The Dominikanerberg is the monopoly site of our family winery and the highest vineyard in the Ruwer Valley, with barren, blue slate soils. The Dominikanerberg is a 6-hectare site completely surrounded by forest and meadows: perfect conditions for biodynamic cultivation. Our Shropshire sheep live in this vineyard for six months of the year.
The 2021 vintage was cool and produced wines with classic Ruwer characteristics: lean and elegant. The grapes were hand-picked and came from nearly 50-year-old vines on the highest-altitude parcel in the Dominikanerberg: cool and windy conditions here. The grapes need time to ripen and dry quickly due to the wind. Accordingly, we brought the grapes for this wine to the winery at the very end of the harvest.
Fermentation in a large wooden barrel with natural yeasts. Two years of barrel aging on the lees. The wine exhibits depth and complexity. Grassy, herbal aromas combine with a delicate creaminess on the finish. This wine pairs perfectly with fine fish dishes such as zander with parsley root purée or char with fennel, as well as light poultry with herbs, such as corn-fed chicken with lemon thyme. Vegetarian dishes such as asparagus risotto, fried polenta with king oyster mushrooms, or herb tagliatelle.
